  • Hearty Butternut Squash Soup

    Butternut squash, with its sweet, nutty flavour, is a quintessential autumn vegetable. Transform it into a velvety, warming soup that's perfect for those chilly evenings.

    Ingredients: Medium to large sized butternut squash (chopped), chopped onions, garlic, ginger, rosemary, cream, vegetable stock, seasonings (nutmeg, cinnamon, salt, and pepper), extra-virgin olive oil, and salt to taste.

    Instructions:

    1. In a large saucepan, sauté onions and garlic in olive oil until translucent. Add butternut squash, vegetable stock, cream and seasonings.
    2. Let the mixture simmer until everything is tender. This should take about 15-20 minutes.
    3. Turn off the heat and let it cool. Once the mixture has cooled, transfer it to a blender. Blend until it turns into a vibrant orange coloured soup.
    4. Serve it in a bowl and garnish it with chopped parsley.
  • Classic Chili

    Nothing says fall like coming home to a classic chili dish. It is hearty, versatile and so filing! No wonder this is the staple comfort food for many of us. 

    Ingredients: Lean ground beef, beef broth, olive oil, finely chopped onion, chili powder, tomato diced as well as paste, garlic powder, seasonings like sugar, salt, cumin, and black pepper, boiled red kidney beans, and tomato sauce.

    Instructions:

    1. Place a large saucepot over medium flame. Saute onions in olive oil until they are translucent.
    2. Add the ground beef and cook until they are brown in colour. You may want to break apart the ground beef with a wooden spatula or a spoon.
    3. Add all your seasonings along with tomato paste and garlic powder and combine everything. Let the mixture simmer for some time. 
    4. Now add the red kidney beans, broth, diced tomatoes, tomato sauce, and combine everything very well.
    5. Let the chili simmer for about 20-30minutes, uncovered. Stir occasionally.
    6. Turn off the heat and let the chili cool down before serving.
  • Sticky Toffee Pudding

    Indulge your sweet tooth with this decadent dessert that's a true British classic. Sticky toffee pudding combines moist sponge cake with a luscious toffee sauce that will have you licking your spoon. 

    Ingredients: Pitted and chopped dates (preferably medjool), butter, baking soda, black treacle, sugar, eggs, vanilla extract, flour, baking powder, double cream, and salt.

    Instructions:

    1. Soak the dates in hot water with baking soda for nearly 30-minutes.
    2. Line the pudding basin with butter and place baking parchment. Set it aside.
    3. Heat some butter, treacle, vanilla extract, salt and sugar in a saucepan over medium flame until the sugar dissolves. Keep stirring occasionally. 
    4. Once this mixture has cooled down, pour it in the lined pudding basin.
    5. Now, beat some egg, flour, butter, treacle, and sugar together. Add the baking soda, dates (with the soaking water), and fold the mixture completely.
    6. Spoon this mixture in the pudding basin as the second layer. Ensure you leave some space at the top for the mixture to rise.
    7. Place the pudding basin in an aluminum pressure cooker, and slow cook it on a low flame for about 8 whistles.
    8. Once baked, this beloved dessert can be served hot, accompanied by a scoop of vanilla ice cream or a drizzle of warm custard.
