Nobody wants to be stuck in the kitchen cooking while there's a lively party happening in the other room. As the host, you should enjoy the party too. So, if you are someone who often invites friends over, here are a few recipes to help you create crowd-pleasing meals without the long tiring hours in the kitchen.
Ingredients:
- For the crust: 1 cup all-purpose flour, ¼ cup oil, ½ tsp salt, and 2 tbsp chopped fresh basil.
- For the quiche: 2 tbsp butter, minced garlic, some diced onion and zucchini, some chopped tomatoes, spinach, and mushroom, 1 tsp oregano, 1tsp sea salt, freshly ground black pepper, ½ cup milk, 1 cup of mixed cheese (goat cheese, feta cheese, and cheddar cheese), and 6 large eggs.
Method:
- Start with preheating the oven to 375°F. In the meantime, spray cooking spray on a round pie dish.
- In a mixing bowl, prepare the dough for the crust by stirring together the ingredients of the crust with some cold water. Ensure the dough is combined well.
- Spread the dough in the pie dish and press it down using your fingers.
- Heat some oil in a good-quality Frypan on medium heat. Add onions and a pinch of salt. Once the onions have caramelised, introduce other vegetables along with minced garlic. Cook the mixture for a good ten minutes or until all the veggies have softened. Add spinach, oregano, salt, and pepper for seasoning. Let the vegetable mixture cook for another 2 minutes. Transfer the mixture over the pie crust.
- Separately, whisk the eggs with milk and cheese in a medium bowl. Pour it over the vegetables in the pie dish.
- Now let the pie dish bake for 55-60 minutes in the oven. Once cooked, let the quiche cool down and then serve!
Ingredients: 400 gms spaghetti, 100 gms finely chopped pancetta, 2 large eggs, 100 gms parmesan cheese, 50 gms pecorino cheese, 2 peeled garlic cloves, black pepper, and sea salt
Method:
- Cook the spaghetti in a large saucepan of salted boiling water until al dente.
- Meanwhile, heat a frying pan and cook the pancetta with the garlic cloves until crispy. Remove the garlic cloves once the pancetta is done.
- In a mixing bowl, whisk together the eggs with grated parmesan cheese.
- Drain the spaghetti and add the spaghetti to the frying pan with the pancetta.
- Remove the pan from heat and quickly mix in the egg and cheese mixture, stirring constantly to create a creamy sauce. You can add some water to increase consistency, as desired.
- Season with freshly ground black pepper and serve immediately.
Ingredients: 500g diced chicken breast, 2 tbsp vegetable oil, 1 large chopped onion, minced garlic cloves, minced ginger, 3 tbsp tikka masala paste, 400ml coconut milk, 200g chopped tomatoes, Fresh coriander for garnish
Method:
- Cook the chicken in a large frying pan with some oil until browned. Remove and set aside.
- In the same pan, add onion, garlic, and ginger and cook them until caramalised and softened.
- Stir in the tikka masala paste, and chopped tomatoes, and cook for another 2 minutes. Then pour the coconut milk into the pan and bring to a simmer
- Return the chicken to the pan and cook for another 10-15 minutes until the chicken is fully cooked and the sauce has thickened.
- Garnish with fresh coriander and serve with rice or naan bread.
