5 Best One-Pan Skillet Meals for Easy Weeknight Dinners

Do you like picking up a recipe just because it sounds delicious but is way too elaborate? In a cast-iron skillet pan, sauté the leftover vegetables like onions, carrots, peas, and leeks, along with ginger and garlic. Add cooked rice, soy sauce, sesame oil, black pepper, and salt. Mix everything well. That’s it. You have home-cooked fried rice ready. You can include eggs in your fried rice to add protein to the dish.

  1. Tuesday - Skillet Chicken Fajitas

A colourful, sizzling plate of chicken fajitas is always a crowd-pleaser. All you need are boneless chicken breasts or thighs, sliced bell peppers, onions, and a homemade or store-bought fajita seasoning. Sauté the chicken first until golden and cooked through, then add the veggies and cook until tender-crisp. Serve in warm tortillas with your favourite toppings—sour cream, guacamole, salsa, or cheese. Bonus: it all cooks in under 30 minutes.

  1. Wednesday - Beef and Broccoli Stir-Fry

This takeout favourite can be made healthier and faster at home using just one skillet. Thinly slice flank steak or sirloin and cook it in a hot pan with sesame oil until browned. Add broccoli florets and a quick sauce made of soy sauce, garlic, ginger, and a bit of honey or brown sugar. In less than 20 minutes, you’ll have a savoury, satisfying dish best served over rice or noodles.

  1. Thursday - Cheesy Taco Skillet

Perfect for taco night with a twist, this one-skillet meal combines ground beef or turkey, taco seasoning, black beans, corn, and salsa. Stir in cooked rice or small pasta (like elbow macaroni) and top with shredded cheese. Cover until the cheese melts, then serve with tortilla chips or wrap in tortillas for a handheld option. It’s a hit with kids and adults alike.

  1. Friday - Vegetarian Skillet Ratatouille

For a veggie-packed meal, ratatouille is a vibrant and healthy option. Sauté onions, zucchini, eggplant, bell peppers, and tomatoes with garlic and herbs like thyme or basil. Let it simmer until everything is tender and the flavours have melded together. Serve with crusty bread or over couscous for a satisfying plant-based dinner that celebrates fresh ingredients.
